Lucky strike: This varietal is descended from a single dancong oolong tree that was struck by lightning during a storm on Phoenix Mountain. Though most of the tree was zapped, the tea grower rescued enough of it to graft onto another tree and bring it back to life. It’s said this electrifying encounter forever changed the varietal’s flavor (for the better). Layered notes of sweetness, spice, and umami? We’d call that a recharging brew.
